Eggplant Pakora Recipe Information
This recipe is very popular in Pakistani households and is often prepared on rainy days, serving guests, and during Iftar. The pakora coating (chickpea powder paste) is very healthy and nutritious for diabetic patients. The snack goes well with chutney (sauce made with tamarind). The snack can also be served with tea along with sweets and desserts.

- Salt, Red Chilli Pepper Dried Fenugreek (optional)
- Gram Powder (Chickpea Power). Can be replaced with the Pakora mix available in Pakistani Stores.
Preparation Steps for Eggplant Pakoras or Fritters
01Pour some gram powder into a container. Add water to make a uniform paste.
02Add salt, red pepper, coriander powder, and carom seeds for flavouring.
03Heat the oil in a work or a wide pan.
04Slice eggplant sidewise to make thin round strips.
05Dip the eggplant the gram powder paste and deep fry till the Pakoras turn light brown on both sides. Do not overcook.
06The Pakoras can be eaten with mint sauce.
