Sindhi Biryani Recipe
Ingredients for Sindhi Biryani:
- 1 kg chicken
- 2 kg rice
- 1 cup water
- 1 kg onions
- 1 tbsp salt
- 2 tbsp ginger-garlic paste
- 8-10 pieces Cloves
- 4 piece black cardamom
- 2 cinnamon sticks
- 1/2 kg potatoes
For Masala:
- 1/2 tbsp red chili powder
- 1 tbsp black pepper
- 2 tbsp crushed cumin seeds
- 5-6 small sized tomatoes
- 1 tbsp whole black pepper
- 1 packet of biryani masala
- 5-6 tbsp yogurt
For cooking rice:
- 10 piece star anise
- 2 piece bay leaves
- 2 tbsp salt
For Biryani Base:
- 2-3 green chilies
- 2-3 lemon
- Coriander
- Fried onions
Method for Preparation for Sindhi Biryani:
01Mix the meat, onions, salt, ginger-garlic paste, cloves, black cardamom and cinnamon sticks along with water.
02After mixing, cover the pot with a lid and let it cook for 30 minutes.
03Soak rice in a separate pot and filter them out. In another pot boil the potatoes and add a little bit of food coloring.
04After 30 minutes, add 1 cup oil in the pot with the meat in. Add the red chilli powder, black pepper, cumin seeds and tomatoes and cook the meat for a few more minutes.
05Add black pepper and biryani masala along with yogurt. Mix well.
06In a separate pot add star anise and bay leaves along with 4 cups of water. Once the water boils, add 2 tbsp salt.
07Now add the previously soaked rice and cook them till they are nearly done. Add 2 tbsp white vinegar.
08In a separate pot add a little bit of oil and put a small layer of rice. Now add yellow food coloring. Add some green chillies, lemon, coriander and fried onions.
09Put half quantity of mutton and potatoes.
10Now put another layer of rice and another layer of food coloring. Repeat the same process of adding chillies, mutton and potatoes. Add all the leftover rice at the end.
11Cover the pot with a lid and cook for 20 minutes.
Once the biryani is ready, give it a good mix and it's ready to serve!
