Chicken Biryani Recipe
Chicken Biryani is a very popular Pakistani rice dish eaten all across the country. Originally, this dish comes from the Mughal era culture of the Indian Sub-continent is much more popular in the Sindh area of Pakistan. In recent years, the dish is widely consumed across the country in homes and restaurants.

Ingredients for Chicken Biryani:
- 1 kg chicken
- 5 Onions (sliced)
- 1 cup cooking oil
- 1 Tbsp Cumin Seeds
- 3-4 pieces Black Cardamom
- 2 Pieces Cinnamon Quills
- 1 Tbsp Garlic/ Ginger Paste
- 1/2 Tbsp turmeric powder
- 1/2 Tbsp Red Chilli Powder
- 1/4 Spoon black pepper
- 1 Tbsp Salt
- 3 Tomatoes
- 1/2 Packet biryani Masala
- 1/2 Tbsp Ground Black Pepper
- 5-6 Tbsp Yogurt
- 1 kg Rice (soak in Water)
- 3-4 Litres water
- 3 Pieces Bay Leaves
- 8 Pieces star anise
- 2 Tbsp Salt
- 1 Lemon
- 2-3 Green Chillies
- 1 Piece mint
- Red Colour
- Yellow Colour
Method for Preparation of Chicken Biryani:
01Soak the rice for 30 minutes.
02In a pot heat a cup of oil along with cumin seeds, black cardamom and cinnamon sticks. After 2-3 minutes, add the onions and fry till golden brown.
03Add ginger-garlic paste to the pot and mix. After that, add the chicken, stir the ingredients and then add some turmeric powder, red chilli powder and whole black pepper. Mix well and cook for 10-15 minutes.
04Add some salt and tomatoes and cook for some minutes. Add the biryani masala, ground black pepper and cook for 10 minutes.
05After that add some yogurt and then cook for another 5 minutes.
06In a pot with 3 litres of water, add bay leaves and star anise. Boil the water.
07Once the water is boiled, add the rice to the pot. Add 2 tbsp of salt and mix well. Cook the rice till nearly done.
08Take some extra oil from the cooked chicken and put it onto the base of the pot. Spread a layer of rice, then add some yellow and red colour (3-4 drops).
09Then add some mint, lemon and green chillies. After that, spread half quantity of the chicken onto the rice.
10Spread another layer of rice and repeat the same process.
11Put the remaining rice on the top along with some food colouring at the end.
12Cook the rice for 15-20 minutes on medium-low flame.
Your delicious biryani is ready, make sure to give it a good stir so everything is properly mixed. Serve with raita and enjoy!
