Ingredients Chicken with Lemon and Basil Sauce:
- 55 g (2 oz or 2/3 cups) fresh breadcrumbs
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 3 tbsp chopped basil
- 3 garlic cloves, crushed
- 1 tsp sugar
- 8 skinless, chicken thighs
- 1 tbsp olive oil, extra
Method for Preparation of Chicken with Lemon and Basil Sauce:
01Place the breadcrumbs in a food processor or blender. Add oil, lemon juice, basil, garlic and sugar.
02Blend for 20 seconds or until smooth. Transfer to a medium pan and stir gently over low heat 2 minutes or until heated through. Serve with chicken.
03Trim chicken of excess fat and sinew. Place on cold, lightly oiled grill (broiler) tray.
04Brush chicken with oil and cook under medium-high heat for 5 minutes on each side or until tender.
05Serve with sauce. Garnish with basil.
Substitution:
- Chicken can be fried or baked instead of grilled (broiled).
Storage Time
- The sauce can be made several hours before required. Store, with plastic wrap, pressed down over the surface of the sauce, in the refrigerator.
