Tandoori chicken is a subcontinental dish prepared by roasting chicken marinated in yogurt and spices in a tandoor, a cylindrical clay oven.
Tandoori Chicken is a very common dish in most Pakistani restaurants. The meat is marinated and refrigerated overnight. This way the spices are absorbed in the meat. The dish in the house can be cooked in the oven or BBQ grill.
Ingredients for Tandoori Chicken and Vegetable Skewers Recipe:
- 250 g (9 oz/1 cup) plain yogurt
- 2 garlic cloves, crushed
- 2 tsp grated fresh ginger
- 2 tsp ground turmeric
- 2 tsp garam masala
- 6 skinless, boneless chicken thighs, cut into 4 cm (1+1/2 inch) cubes
- 1 red capsicum (pepper), cut into 2.5 cm (1 inch) squares
- 1 onion, cut into thin wedges
Method for Preparation of Tandoori Chicken and Vegetable Skewers:
- Combine yogurt in a small bowl with garlic, ginger, turmeric, and garam masala. Set aside.
- Thread chicken, capsicum and onion alternately onto soaked skewers.
- Brush yogurt mixture lightly over skewers.
- Place skewers on cold, lightly oiled grill (broiler) tray and cook, brushing with yogurt mixture occasionally, under high heat for 5 minutes.
- Turn and cook, brushing again with yogurt mixture, for 5 minutes or until chicken is tender. Serve with saffron rice, if desired.
Storage Time
- Skewers can be prepared a day ahead. Store, covered, in the refrigerator. Cook just before serving.
