A quick and easy recipe including tofu, peas, and mushrooms serving 4 people. Ideal for short notice dinners.
Tofu, Snow Pea and Mushroom Stir Fry
Ingredients for Tofu, Snow Pea and Mushroom Stir Fry:
- 250g (1+1/4) cups jasmine rice
- 3 tbsp peanut oil
- 600g firm tofu, drained, cut into 2cm cubes
- 2 tsp sambal oelek or chilli paste
- 2 garlic cloves, finely chopped
- 400g fresh Asian mushrooms, sliced
- 300g snow peas, trimmed
- 3 tbsp kecap manis
Method for Preparation of Tofu, Snow Pea and Mushroom Stir Fry:
01Bring a large saucepan of water to a boil.
02Add the rice and cook for 12 minutes, stirring occasionally. Drain well.
03Meanwhile, heat a wok until very hot. Add 2 tbsp of the oil and swirl to coat.
04Stir fry the tofu in two batches on all sides for 2-3 minutes or until lightly browned, then transfer to a plate.
05Add the remaining oil to the wok and the sambal oelek, garlic, mushrooms, snow peas and 1 tbsp water and stir fry for 1-2 minutes or until the vegetables are almost cooked but still crunchy.
06Return tofu to the wok add kecap manis and stir fry for another minute, or until heated through and combined.
07Serve immediately with rice.
Substitution:
Use 3 tbsp grated fresh ginger instead of the sambal oelek.
