Piri Piri chicken is a traditional Portuguese dish. It's usually grilled and charred whole chicken pieces covered in a chili based paste or sauce.
Ingredients for Peri Peri Chicken:
- 6 bird's eye chillies, finely chopped, with seeds
- 1 tsp coarse salt
- 125 ml (1/2 cup) olive oil
- 185ml (3/4 cup) cider vinegar
- 1 garlic clove, crushed
- 4 chicken Maryland (leg quarter)
- 4 lemon wedges
Method for Preparation of Peri Peri Chicken:
01Combine the chilli, salt, olive oil, vinegar and garlic in a jar. Seal and shake well to combine.
02Place the chicken pieces in a shallow dish and pour on the marinade.
03Cover and marinate for 1 hour, or overnight if time permits.
04Cook the chicken on a hot barbecue or chargrill pan (griddle), as close to the flame as possible, basting regularly with the marinade, for 50-60 minutes, or until the chicken is cooked through and the skin begins to crisp.
05Serve with lemon wedges, corn cobs and steamed green beans.
Side Note by the Chef
- Any chicken cut that is still on the bone can be used in this recipe. Peri-peri/Piri Piri is also excellent for barbecuing prawns (shrimp). Deseed the chillies for a milder tasting dish.
