Thai Green Curry Recipe

This Thai green beef curry recipe is quick and uncomplicated. Delicious beef, cooked with aubergine in a fragrant green curry sauce. 

List of ingredients  for this recipe:

  • 450g beef sirloin
  • 1 tbsp oil
  • 3 tbsp Thai green curry paste
  • 2.5 cups coconut milk
  • 4 kaffir lime leaves (torn)
  • 1-2 tbsp fish sauce
  • 1 tsp brown sugar
  • 150g Thai Aubergines (eggplant)
  • Handful of basil
  • 2 green chillies


Preparation Steps for Thai Green Curry Recipe

1 Take the beef and cut it into thin long strips with a sharp knife. After that, put it aside.

2 In a big pan or wok, heat the oil. Cook for 1-2 minutes after adding the curry paste.

3 Half of the coconut milk should be added at this point. Cook for 5-6 minutes, stirring periodically until the surface has a slight gloss. 

4 Combine the meat, kaffir lime leaves, fish sauce, sugar, and aubergine in a large mixing bowl. Cook for another 2-3 minutes before adding the rest of the coconut milk. 

Return to low heat and continue to cook until the meat and aubergines are soft.  

Before serving with white rice, add the basil and stir well.
