Description
Ingredients for Beef Goulash Soup:
- 1 tsp olive oil
- 170g beef sirloin steak, trimmed of fat, cut into 2cm pieces
- 1 small brown onion, chopped
- 500ml (2 cups) of water
- 375ml (1+1/2 cups) salt-reduced beef stock
- 400g can no-added-salt chopped tomatoes
- 1 carrot, thinly sliced
- 1 tsp cocoa powder
- 1 clove garlic, crushed
- 1 cup finely shredded cabbage
- 30g wide dried egg noodles
- 2 tsp ground paprika, plus extra to serve (optional)
- 60g (1/4 cup) light sour cream
- Chopped parsley, to serve
Method for Preparation of Beef Goulash Soup:
01Heat oil in a large saucepan over medium-high heat. Add meat and cook, stirring often, for 3-4 minutes, or until browned.
02 Add the onion and cook, stirring often, for 3 minutes or until the onion softens.
03Add the water, stock, tomatoes, carrot, cocoa powder and garlic to pan.
04Increase heat to high and bring to a boil.
05Reduce heat to medium and simmer, uncovered, for 15 minutes or until meat is tender.
06Add cabbage, noodles and paprika to pan.
07Simmer for 5-7 minutes, or until noodles are tender, but still firm.
08Remove pan from heat.
09Divide soup among serving bowls.
10Top with sour cream, parsley and extra paprika, if desired.
Cook's Tip:
You can freeze soup in individual containers for upto 3 months. Don't forget to put label and date first.
